Spiced Beetroot Hummus
Vibrant magenta hummus made with roasted beetroot, chickpeas and warm spices. Earthy, sweet and so striking it looks almost too good to eat.
Ingredients
- 400gcooked beetroot
- 240gcanned chickpeas, drained
- 3 tbsptahini
- 2 clovesgarlic
- 3 tbsplemon juice
- 2 tbspolive oil
- 1 tspground cumin
- 0.5 tspsmoked paprika
- 0.25 tspcayenne pepper
- 0.5 tspsea salt
- 0.25 tspblack pepper
- 2-3 tbspwater
How to make it
Add beetroot, chickpeas, tahini, and garlic cloves to a food processor.
Add lemon juice, olive oil, cumin, smoked paprika, and cayenne pepper.
Season with sea salt and black pepper.
Blend until smooth, adding water 1 tablespoon at a time until desired consistency is reached.
Taste and adjust seasonings as needed.
Transfer to a serving bowl and drizzle with olive oil if desired.
Serve immediately with fresh vegetables or crackers.
